Here is the recipe for one of the dishes featured in the episode.Poha Jalebi :Poha Ingredients :1 cup thick poha (flattened rice)2 tbsp Dhara oil1 tsp mustard seeds1 tsp cumin seeds1 small potato, diced (optional)1 onion, finely chopped2-3 curry leaves1 green chili, slit½ tsp turmeric powder1 tbsp lemon juiceSalt to tasteFresh coriander, chopped (for garnish)Roasted peanuts (for garnish)Recipe :Prep poha : Rinse poha in water, drain, and set aside for 5 mins.Temper spices : Heat Dhara oil. Add mustard seeds, cumin, curry leaves, and green chili. Sauté.Add veggies : Stir in onions and potatoes (if using). Cook until soft.Cook poha : Add turmeric, salt, and soaked poha. Mix gently. Cover and cook for 2-3 mins.Finish : Sprinkle lemon juice and garnish with coriander and peanuts.Jalebi Ingredients :Batter :1 cup all-purpose flour (maida)2 tbsp dahi1 tbsp sooji¼ tsp baking sodaWater (as needed)Sugar Syrup :1 cup sugar½ cup water1 tsp lemon juice (prevents crystallization)¼ tsp cardamom powderRecipe :Make batter : Mix flour, dahi and sooji Add water to form a smooth batter (similar to pancake batter). Rest for 6-8 hours (fermentation gives crispiness).Prepare syrup : Boil sugar, water, and lemon juice until sticky (1-thread consistency). Add cardamom. Keep warm.Fry jalebis : Heat Dhara oil. Pour batter into a cloth-lined piping bag or bottle. Pipe spirals directly into hot oil. Fry until crisp and golden.Soak : Immediately dip fried jalebis into warm syrup for 10-15 seconds.
