Kachori Sabzi Ingredients :For the dough :2 cups maida¼ cup sooji2 tbsp Dhara oil½ tsp saltWater (as needed)Sabzi Ingredients :2 tbsp Dhara oil1 tsp cumin seeds1 medium onion, finely chopped2 tomatoes, chopped1 cup mixed vegetables (potatoes, peas, carrots, beans)1 green chili, slit1/2 tsp turmeric1 tsp coriander powder1 tsp red chili powder1/2 tsp garam masalaSalt to tasteFresh coriander for garnishRecipe :Prepare the dough : Mix flour, sooji, ghee and salt. Add water gradually to form a stiff dough. Rest for 20 mins.Heat Dhara oil. Cook for 2 mins. Assemble kachoris : Roll dough into small balls. Flatten each, add 1 tbsp filling, seal edges, and roll gently into a disc (avoid thin edges).Fry : Heat Dhara oil on medium. Fry kachoris until golden and crisp (5-6 mins). Drain on paper towels.Sabzi :Heat Dhara oil, temper cumin seeds. Add onions and sauté until golden.Add tomatoes, green chili, and spices. Cook until tomatoes soften.Toss in vegetables and cook until tender (8-10 minutes).
